Grade 9 - Adult. Join Carol for an afternoon of kimchi making, called kimjang, which is listed as part of UNESCO Intangible Cultural Heritage of Humanity. Come prepared for hands-on learning experience to make your own batch of traditional Korean napa cabbage kimchi, while gaining a deeper understanding of the history, ingredients, and traditions behind Korea’s national dish. From the first steps of salting the cabbage all the way to the preparation of kimchi paste, you’ll be guided step-by-step to create a take-home kimchi perfectly suited to your tastes and spice level. In addition to the kimchi you made (about 1-pound), you will take home cabbage and all the ingredients to replicate it at home. If time permits, we’ll enjoy a simple meal together. Bring your own apron, cutting mat, knife, mandoline (optional), two medium mixing bowls, and a flat container to take home your kimchi. All ingredients will be provided. Your kimchi can be made vegan and gluten-free. Instructor: Carol Chase. 1 class.
