06. THE SPARKLE OF LIFE (Thursday, October 9) Spain’s sparkling wines are in the middle of a profound transformation. The Cava appellation is passing more restrictive laws, creating the Paraje Calificado category to designate cavas from the best vineyards, and even starting a much-needed regional differentiation. But still, some of the more ambitious wineries left the Cava appellation to create Corpinnat, an association with stricter rules and aspirations for more recognition. At the same time, other wine regions are producing their own sparkling. This tasting will showcase some of the most ambitious sparkling wines produced in Spain, and blind taste them along with outstanding examples from Champagne, California, and other wine areas to offer the best selection to date.
